Zucchini Salad (spiralized) uses raw zucchini cut into noodles or ribbons as the base, paired with thinly sliced white onions for a mild bite. Ingredients

  • 2 pounds zucchini about 3 medium
  • ½ cup white onion sliced
  • ¼ cup olive oil
  • 1 lemon juiced
  • cup feta cheese crumbled
  • 2 tablespoons parsley chopped, fresh
  • 1 tablespoon dill chopped, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Spiralize zucchini using the larger blade on a spiralizer. (see note if you do not have a spiralizer).
  2. Chop zucchini noodles a couple of times so they are manageable to eat and toss (about 3"). 
  3. Slice onion as thinly as possible and add to the zucchini. 
  4. Add remaining ingredients and gently toss.
  5. Allow to sit for 15 minutes before serving.

Notes

  • If you don't have a spiralizer, peel zucchini lengthwise into thin ribbons using a vegetable peeler as an alternative.
