Zucchini Smoothie

This Zucchini Smoothie uses frozen chopped zucchini blended with almond milk, soft Medjool dates, almond butter, cocoa powder, vanilla, and nutmeg for a creamy, mildly sweet drink. Adding ice enhances refreshment, and optional chocolate chips and coconut flakes provide texture and garnish. It’s a unique way to incorporate zucchini in a smoothie format.

Description

The smoothie starts by blending medium frozen zucchini with almond milk, pitted and soft Medjool dates for natural sweetness, creamy almond butter, cocoa powder, vanilla extract, and a touch of nutmeg for warmth. The mixture is blended until smooth, with extra almond milk added as needed for desired consistency. After initial blending, a handful of ice is added to chill and slightly thicken the drink.

Serving can be elevated by drizzling additional almond butter on top and sprinkling chocolate chips and coconut flakes, both optional, for added texture and flavor contrast. The frozen zucchini contributes a subtle vegetable note without overpowering the chocolate and nut flavors. The resulting smoothie is creamy, lightly sweet, and refreshingly cool.

This drink suits a snack or light breakfast. Preparing the dates ahead by soaking in warm water softens them if needed for smoother blending. It's a creative way to include zucchini raw in a sweet beverage.
