Description
The base is thick slices of sourdough bread brushed with olive oil and toasted under a high broiler until golden on both sides, creating a crunchy platform. A fresh garlic clove is rubbed onto the warm bread to add a subtle pungency. Thinly sliced zucchini is coated with olive oil, Italian seasoning, salt, and pepper, then broiled until soft and brown spots appear, concentrating the flavor.
Ricotta cheese is spread on the toasted bread before adding the warm zucchini, which melds creamy and tender textures. A drizzle of olive oil and a sprinkle of fresh dill or parsley completes the dish, enhancing its herbal notes. It works beautifully as a light lunch or snack with clean, fresh flavors.
Adding lemon zest to the ricotta is an optional step that imparts a bright citrus flavor, complementing the richness of the cheese and the earthiness of zucchini.
Ingredients
- 4 lices sourdough bread
- 1 clove garlic
- 1 medium zucchini thinly sliced (¼" thick)
- 1 tablespoon olive oil or as needed
- ½ teaspoon Italian seasoning
- salt
- black pepper
- 1 cup ricotta cheese
- dill and chopped parsley for serving, optional, fresh
Instructions
- Turn broiler on to high heat (500°F) and arrange an oven rack about 4" from the broiler.
- Brush sourdough with olive oil on both sides. Place on a baking sheet and broil 2 minutes per side or just until golden.
- Remove from the oven and immediately rub one side of the toasted bread with the garlic clove. Set aside.
- Toss zucchini with 1 tablespoon olive oil, Italian seasoning, and salt & pepper to taste.
- Spread zucchini on a baking sheet and broil 4-5 minutes or until softened and lightly browned.
- Spread each piece of toast with ¼ cup ricotta cheese.
- Top with warm zucchini slices and drizzle with olive oil. Season with salt & pepper and sprinkle with fresh herbs.
Notes
- For a citrusy brightness, stir 1 teaspoon of lemon zest into the ricotta before spreading on the toast.
