Description

This soup begins by melting butter and sautéing diced onions and minced garlic until tender and fragrant. Flour is added to form a roux and gives body to the soup. Milk is gradually whisked in, followed by chicken or vegetable broth, salt, and chopped cauliflower. After simmering until the cauliflower is soft, the soup is pureed until smooth. Returning it to the pot, shredded pepper jack and sharp white cheddar cheese are stirred in until melted, adding creaminess and a sharp flavor contrast.

  • 1 white onion diced

  • ¼ cup flour
  • 2 cups milk
  • 3 cups chicken broth (or vegetable broth)
  • 2 teaspoons salt
  • 1 head cauliflower chopped
  • 1 cup pepper jack cheese shredded
  • 2 cups cheddar cheese shredded, sharp, white

Instructions

  1. Melt butter in a large pot. Add garlic and onion and sauté until onions are tender. Add flour and stir until mixture clumps up.
  2. Gradually whisk in milk. Add broth, salt, and cauliflower. Simmer for 15 minutes or until cauliflower is tender.
  3. Transfer soup to a blender and pulse until smooth. Return soup to pot. Add cheeses and stir until melted and combined with soup. Serve with extra cheese if desired.

Notes

  • To add a smoky chipotle flavor, stir in 1 to 2 tablespoons of chipotle adobo sauce from canned chipotle peppers.
