Description
This soup begins by melting butter and sautéing diced onions and minced garlic until tender and fragrant. Flour is added to form a roux and gives body to the soup. Milk is gradually whisked in, followed by chicken or vegetable broth, salt, and chopped cauliflower. After simmering until the cauliflower is soft, the soup is pureed until smooth. Returning it to the pot, shredded pepper jack and sharp white cheddar cheese are stirred in until melted, adding creaminess and a sharp flavor contrast.

- 2 tablespoons butter

Instructions

- Transfer soup to a blender and pulse until smooth. Return soup to pot. Add cheeses and stir until melted and combined with soup. Serve with extra cheese if desired.
