15-min. Easy Bulgogi Beef Ramen

This 15-minute Bulgogi Beef Ramen combines thinly sliced ribeye steak and tender baby bok choy with quick-cooked ramen noodles tossed in savory bulgogi sauce. The stir-fry technique preserves the beef's tenderness while allowing the bok choy to wilt slightly, blending textures. Rinsing the instant noodles before mixing prevents overcooking and keeps them springy. This dish works well for a speedy dinner with a mix of hearty meat and fresh greens, finished with optional sesame seeds for texture contrast.

Description

The 15-min. Easy Bulgogi Beef Ramen features thin slices of ribeye steak cooked briefly in a hot pan with onion and green onion, creating a tender yet flavorful base. Baby bok choy adds a mild bitterness and crispness that balances the rich bulgogi sauce infused throughout the dish. The instant ramen noodles are softened separately, rinsed under cold water to avoid sogginess, and then combined into the pan to absorb the sauce and mingle with the beef and vegetables. Cooking is quick, relying on high heat stir-frying to maintain texture and flavor integrity.

The dish is ready to serve immediately after combining all ingredients, optionally garnished with sesame seeds for a nutty finish. The bulgogi sauce provides a savory-sweet depth that complements the beef and greens without overpowering the noodles. This recipe offers a filling meal suitable for those seeking a mix of protein, greens, and carbs in a short time.

Using hot pot style thinly sliced ribeye allows the meat to cook rapidly without drying out, and rinsing the noodles prevents them from becoming mushy. The method avoids prolonged boiling of noodles, preserving their bite, and the choice of bulgogi sauce balances sweetness with savory notes for umami impact.

  • 1 green onion finely chopped
  • ½ small onion sliced

  • ½ tablespoon vegetable oil or any neutral oil
  • 1 teaspoon sesame seeds optional garnish

Instructions

  1. In a large pan or wok filled three-quarters of the way with water, bring to boil. Once it comes to boil, add ramen noodles, and begin loosening with tongs. Once they are loosened, quickly strain and rinse under cold water. Do not boil them. Set aside.

  3. Quickly add in beef and stir fry until beef is 25% cooked.
