  • 2 tablespoon olive oil
  • 1 pound chicken thighs boneless and skinless, cut into 1" pieces
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt or to taste
  • ½ teaspoon pepper or to taste
  • 4 cloves garlic minced
  • ½ cup sundried tomatoes drained, chopped
  • 2 cups broccoli florets chopped in small pieces
  • ½ cup chicken broth low sodium or no sodium added
  • ½ cup heavy cream
  • 1 cup cheddar cheese shredded

Instructions

  1. Cook Chicken: Heat the olive oil in a large skillet over medium heat. Add the chopped chicken thighs and season with Italian seasoning, salt, pepper and toss well. Cook for 4 minutes or until the chicken is no longer pink and start to turn golden.
  2. Add Ingredients: Stir in the garlic and cook for another 30 seconds or until aromatic. Add the sundried tomatoes, broccoli florets, chicken broth and cook for 3 minutes.
  3. Finish: Stir in the heavy cream and cheddar cheese and cook for 2 more minutes, until the cheese melts.
  4. Serve: Serve over noodles, mashed potatoes or zucchini noodles/cauliflower rice for a low/carb option.

Notes

  • You can use chicken breast instead of thighs for this dish, cooking time may vary!
  • If you prefer, you don’t need to use heavy cream! You can substitute coconut cream or a lower fat content cream/milk in order to lessen the fat percentage in this dish.
  • Adding any assortment of extra vegetables; mushrooms, kale, butternut squash, spinach etc. is easily going to make this dish more healthy and give you any extra nutrients you might be looking for!
  • Stored in a sealed airtight container this chicken broccoli will last in the fridge for 3 – 4 days.
  • To extend the shelf life of your chicken broccoli, I recommend putting it in the freezer, stored in a sealed airtight container. It will last up to 4 months frozen.
