20 Minutes Zucchini Stir Fry

This 20 Minutes Zucchini Stir Fry combines thinly sliced zucchini with sautéed onions, garlic, ginger, and a flavorful sauce of soy, vinegar, sugar, and red chili flakes. The result is a tender-crisp vegetable side with a balance of savory, tangy, and mildly spicy notes. Finished with toasted sesame oil, sesame seeds, and scallions, it offers bright Asian-inspired flavors and can be enjoyed over rice for a quick vegetable dish.

Description

The recipe starts by heating neutral cooking oil in a wok or skillet until hot. Thinly sliced onions, minced garlic, and julienned fresh ginger are sautéed briefly until fragrant but not browned. Salt, black pepper, red chili flakes, soy sauce, vinegar, and sugar are added next to create a gentle sauce that lightly coats the aromatics. Then, thin 1/4-inch zucchini slices are added and cooked just until tender-crisp, preserving some bite and preventing sogginess. Toasted sesame oil is tossed in to add a nutty aroma at the end of cooking.

The resulting stir fry is a balance of textures: tender crunchy zucchini and soft onions accented by the zing of ginger and garlic. Red chili flakes provide mild heat, softened by the slight sweetness from sugar and tanginess from vinegar. Garnished with toasted sesame seeds and chopped scallions, the dish carries a bright, fresh finishing touch typical of Asian vegetable stir fries. It is commonly served hot on a bed of plain steamed rice, making it a flavorful yet light vegetable side or main.
