Omelette Ingredients:

  • 2 large eggs
  • Pinch fine sea salt
  • 1/2 Tbsp unsalted butter
  • 1/4 cup shredded mozzarella low moisture, part-skim

Optional Omelette Fillings:

  • Sautéed diced bell pepper and onions
  • fresh spinach coarsely chopped
  • Sautéed mushrooms
  • Crispy Air Fryer Bacon chopped
  • ham diced

Optional Omelette Toppings:

  • chives or parsley chopped, to garnish
  • Salt and freshly ground black pepper
  • Baby tomatoes halved
  • avocado diced

Instructions

  1. Once your fillings and toppings are prepared, beat the eggs and salt in a small bowl until foamy.
  2. Heat the butter in a small non-stick skillet or pan over medium heat, swirling as it melts. Once bubbling, add the eggs and reduce the heat on the stove to low.
  3. Working around the pan with a spatula, pull the cooking eggs from the outside of the pan to the middle, while the liquid fills into the space the eggs left behind. Continue around the pan until the eggs are almost set, but still shiny.
  4. Once the eggs are freely sliding around the pan, fit your spatula underneath the eggs and flip it over. Immediately turn off the heat.
  5. Add your cheese and toppings, and then fold the egg omelette in half and transfer to a plate.

Notes

  • Prepare toppings before cooking the omelet since the eggs cook so quickly.2. Reduce the heat to low as directed and be sure not to overcook the egg. Cooking low and slow ensures the eggs remain moist and yellow in color. Do not brown the egg or it won't taste as good and the omelette will be dry.
