Agedashi Tofu

Agedashi Tofu is deep-fried or pan-fried firm tofu cubes coated with potato starch and served with a light, savory broth made from water, mirin, soy sauce, and hondashi. The tofu has a crispy golden exterior and a soft interior, complemented by the umami-rich sauce poured over after frying. This is a traditional Japanese dish highlighting delicate flavors and textures.

Description

Agedashi Tofu starts with pressing firm tofu to remove moisture and then cutting it into 1-inch cubes. The tofu cubes are generously coated in potato starch, creating a light crust when pan-fried in neutral oil until lightly golden and crispy on each side. Simultaneously, a broth is prepared by simmering water, mirin, soy sauce, and hondashi to develop a savory and mildly sweet flavor.

The result is tofu with a crisp coating and a tender inside, served warm with spoonfuls of the broth that enhance the tofu with umami notes from soy and dashi. The dish balances texture and flavor in a subtle way without heavy sauces.

Agedashi Tofu is typically enjoyed as a starter or side dish in Japanese cuisine and can be garnished with green onions or grated daikon (notes not provided here). Serving immediately after frying preserves the crispy texture.
