Ingredients
- 1 pound beets red, gold or Chioggia beets would all work
- 1 tablespoon olive oil
- ½ teaspoon kosher salt plus more to taste
- ¼ teaspoon black pepper
Instructions
- Preheat the air fryer and prep the beets: Preheat the air fryer to 400 degrees F. Peel and cut beets into 1-inch pieces.
- Season the beets: Transfer to a large bowl, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine.
- Transfer to the air fryer: Transfer the beets into the now-preheated air fryer basket and make sure they are in a single layer.
- Air fry: Air fry for 15 minutes or until they are fork tender. Be sure to turn once halfway through the air frying process.
- Serve: Carefully transfer them to a serving platter, taste for seasoning, and add more if necessary.
