Ingredients
- 3 cups rice cold, 325g
- 1 cup chicken leftover and cubed, 130g
- 5 tbsp tamari soy sauce or regular if not gluten free
- 1.5 cup mixed vegetables I used sweet corn and peas, frozen
- 2 green onions (spring onions), sliced
- 1 tsp sesame oil
- 1 tsp vegetable oil
- 1 tbsp chili sauce optional
- salt to taste
Instructions
- Preheat the air fryer to 350F / 180C.
- Mix all the ingredients together in a large bowl.
- Then transfer to a non-stick pan that fits inside the air fryer basket.
- Cook for 20 mins, stirring the rice mixture a couple of times during cooking.
Notes
- Substitute chicken with turkey or pork, or omit meat for a vegetarian dish.
- Use any combination of vegetables, such as broccoli, string beans, or bell peppers.
- Regular soy sauce can replace tamari for a non-gluten-free version.
