  • 3 cups rice cold, 325g
  • 1 cup chicken leftover and cubed, 130g
  • 5 tbsp tamari soy sauce or regular if not gluten free
  • 1.5 cup mixed vegetables I used sweet corn and peas, frozen
  • 2 green onions (spring onions), sliced
  • 1 tsp sesame oil
  • 1 tsp vegetable oil
  • 1 tbsp chili sauce optional
  • salt to taste

Instructions

  1. Preheat the air fryer to 350F / 180C.
  2. Mix all the ingredients together in a large bowl.
  3. Then transfer to a non-stick pan that fits inside the air fryer basket.
  4. Cook for 20 mins, stirring the rice mixture a couple of times during cooking.

Notes

  • Substitute chicken with turkey or pork, or omit meat for a vegetarian dish.
  • Use any combination of vegetables, such as broccoli, string beans, or bell peppers.
  • Regular soy sauce can replace tamari for a non-gluten-free version.
