Air Fryer Hasselback Potatoes are crisp outside and tender inside! The potato slices are stuffed with cheese and bacon and have delicious flavor in every bite.

Ingredients
- 3 large Russet potatoes
- 6 ounces cheddar cheese
- 9-10 slices Bacon
- 2 tablespoons olive oil
- 1 clove garlic or 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

Instructions
- Scrub the potatoes and dry them off.
- Cut a thin layer off the bottom to create a flat surface and prevent rolling.
- Place two wooden spoons or chopsticks parallel to the potato on either side to stop the knife.
- Cut 1/8" to 1/4" slices using a sharp knife, stopping at the spoon handles. Make sure you keep the potato intact and don't slice entirely through.
- Brush the potatoes with half the oil and microwave for 10 minutes. Remove them and let them cool a bit.
- While in the microwave, cut the cheese and bacon into squares to fit into the slices.
- Once they are cool enough to touch, insert alternating slices of cheese and bacon into each potato slice.
- Brush with more oil, season with garlic, salt, and pepper, and place in a single layer in the air fryer basket. Cook at 390°F for 20-30 minutes until tender inside and crispy outside. Larger potatoes will need a longer cooking time. Use a toothpick to test for doneness. If it goes in easily, they are done.
Notes
- You can make thicker slices in the potatoes, but the edges will get less crispy.
- Switch up the flavoring by using your favorite spices. Add chili powder for a spicy kick or Italian seasoning to serve with an Italian pasta dish.
- You can leave off the bacon for a vegetarian side dish. Or leave off both the cheese and the bacon. The potato slices will still be crispy and delicious.
