Crispy, golden brown, and packed with flavor, these Air Fryer Onion Rings are a delicious and healthier alternative to the traditional version.

Ingredients
- 2 medium onions
- ¼ cup oat fiber
- ¼ cup pork panko or crushed pork rinds
- ¼ cup Super Fine Almond Flour
- ¼ cup grated Parmesan cheese
- 1 large egg beaten
- ½ teaspoon garlic salt
- ¼ teaspoon smoked paprika
- Olive oil (for spraying)

Instructions
- Slice each onion into ½ inch slices, then separate them into rings. Also be sure to remove thin skins between each onion layer and discard.
- Set up your breading station by adding the beaten egg into one dish.
- Add the pork panko, almond flour, parmesan cheese, garlic salt and smoked paprika into a second dish, and whisk to combine.
- Add the oat fiber into a third dish. Take each onion ring and dip it into the oat fiber, shaking off any excess. Then dip it into the egg, allowing the excess to drip off.
- Dip into the breaking mixture and gently cover all sides. Don’t press it into the mixture, you just want a light coating.
- Preheat your air fryer @375°F for 5 minutes.
- Spray your air fryer basket with olive oil and place your first batch of onion rings in an even layer.
- Spray the onion rings with a generous amount of olive oil and air fry for 8-10 minutes or until golden and crisp.
- Repeat the process with the remaining onion slices. Sprinkle some salt as soon as they come out of the air fryer. This helps the salt to stick to the onion rings. Then serve while hot with sugar-free ketchup or your favorite dipping sauce. See post for some great ideas!
