Ingredients
- 1 pound baby Yukon Gold potatoes (450g)
- 1 tablespoon olive oil
- ¾ teaspoon salt
- ½ teaspoon Italian seasoning
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- ⅓ cup grated Parmesan cheese (14g)
- chopped fresh parsley for garnish

Instructions
- Cut each potato in half or quarters to make even pieces, about 1-inch in size.
- In a large mixing bowl, stir to combine the potatoes with the olive oil.
- To the bowl with the potatoes, add the salt, Italian seasoning, pepper, garlic powder, and parmesan cheese. Toss well to coat the potatoes evenly with the dried spice mixture.
- In the basket of an air fryer, place the potatoes in a single layer. Air fry the potatoes at 400°F for 10 minutes.
- Open the air fryer and shake the basket to move the potatoes around, then return them to a single layer. Cook for 8 more minutes, until golden and crispy on the outside, and tender and fluffy on the inside.
- Sprinkle with parsley to garnish. Serve immediately.
Notes
- Leave the skins on. Keeping the skins on the potatoes adds the necessary texture to create the perfect outer crispiness.
- Cut the potatoes evenly. For the best results, cut the potatoes into even, 1-inch pieces to ensure they cook at the same rate. This makes tender, crispy potatoes every time.
- Don’t overcrowd the basket. Arrange the potatoes in an even layer in the air fryer basket so they can crisp evenly. If needed, cook them in several batches.
- Preheat the air fryer. If your air fryer model recommends it, preheat the air fryer before starting the recipe. Doing so will bring it to peak temperature when you add the potatoes, helping them to cook evenly and achieve a perfect golden brown crispiness.
