Ingredients
- 2 (260g) sweet potatoes peeled and cut into 1-inch cubes
- ¼ cup (37.5g) pecans chopped; or more to taste
- ¼ cup (59ml) maple syrup

Instructions
- Peel the sweet potatoes and cut them into even, bite-sized cubes.
- If using pecan halves, chop them with a knife.
- Add sweet potato cubes, chopped pecans, and maple syrup to a large bowl. Toss to combine until the pecans are incorporated and the sweet potatoes are well coated with the maple syrup.
- Place in the air fryer basket in a single layer.
- Cook at 375 degrees F / 190 degrees C for about 18 minutes, or until the potatoes are fork-tender.
Notes
- Make sure the sweet potato cubes are well-coated before cooking.
- Don’t overcrowd the air fryer. Cook in batches if necessary.
- Toss the sweet potatoes halfway through cooking time.
- Serve right away to enjoy the crispy exterior.
