The pie uses a round pan heated before pouring the batter, creating a lightly crisped base with rich, salty feta peeking through a sandwich of layers. This recipe results in a moist, savory baked dish that highlights feta’s tang and creates a unique textured pie.

Description

The Alevropita pie starts with a batter combining all-purpose flour, salt, eggs, milk, and water to form a thick consistency. The round baking pan is preheated and greased with butter and olive oil, inducing sizzle when the batter is poured in, which helps create a crust on the bottom. Two-thirds of the batter is poured first as a base, topped with crumbled Greek-style feta cheese.

The remaining batter is mixed with an additional egg and water to thin it slightly, poured over the feta layer so some cheese remains exposed. Butter pieces and olive oil drizzled on top enhance browning and flavor during baking. The pie bakes at 400˚F for 40 minutes until golden and pulls slightly from the pan’s edges, signifying doneness.

Serving hot or at room temperature allows the pie to be enjoyed crisp or softer as desired. Alevropita works well as a light meal, snack, or part of a larger Greek-inspired spread.

  • 2 cups all-purpose flour 250 grams
  • 1 teaspoon salt
  • 2 egg divided, large
  • 1 1/2 cups milk 355 milliliters
  • 1/4 cup water 60 milliliters
  • 12 ounces feta cheese crumbled, Greek style, 340 grams
  • 2 tablespoons butter plus more for greasing pan, unsalted, 28 grams
  • extra-virgin olive oil for pan and drizzling, Greek

Instructions

  1. Preheat oven to 400˚F (200˚C). Grease a round 15 inch (38 centimeter) pan with butter and drizzle with a little olive oil.
  2. Place the pan in the preheated oven for about 3 minutes, until hot and the oil is sizzling, but not yet smoking.
  3. In a large bowl, combine the flour and salt. Mix in 1 egg and the milk to form a thick batter. 
  4. Pour 2/3 of the batter into the hot pan and spread to cover the entire bottom of the pan. Evenly top with the crumbled feta. 
  5. Mix the remaining egg and water into the remaining 1/3 batter. Pour evenly over the feta. It won't completely cover. Some of the feta will show through.
  6. Dot with pieces of butter and drizzle with olive oil.
  7. Place on the lower rack of the preheated oven and bake until the pie is golden and has left the sides of the pan, about 40 minutes, rotating halfway through.
  8. Serve hot when it is nice and crisp or at room temperature.
