Almond Flour Pancakes

Almond Flour Pancakes combine almond flour with eggs, almond milk, and simple flavorings like cinnamon and vanilla to create tender, lightly spiced pancakes. These pancakes develop a gentle crisp edge when cooked on a greased skillet and hold a soft texture inside. The batter is easy to handle, measured by quarter cups for consistent size. They can be topped with maple syrup and fresh fruit such as berries or bananas for a wholesome breakfast option.

Description

Almond Flour Pancakes use finely packed, blanched almond flour combined with eggs, almond milk, and vanilla extract to make a smooth batter. A small amount of baking powder and cinnamon adds rise and subtle spice. Cooking them on a greased surface over medium heat results in pancakes that bubble on top before flipping to achieve a golden brown color on both sides. These pancakes deliver a lightly sweet and nutty flavor with a soft texture, ideal for a morning meal.

Serving suggestions include maple syrup and fresh berries or sliced banana, which complement the natural sweetness and almond flavor. The recipe allows for some flexibility with maple syrup in the batter, which can be omitted or added depending on sweetness preference.

This recipe requires only basic ingredients and simple cooking steps, making it suitable for a quiet weekend breakfast or when catering to those avoiding regular flour. The use of almond milk keeps the batter moist without being heavy.
