  • 1 oz can coconut milk regular or light
  • ½ cup applesauce
  • ¼ cup pure maple syrup plus more for serving
  • ¼ cup coconut plus more for topping, unsweetened, shredded
  • ¼ cup chocolate chips plus more for topping (I used Lily's chocolate chips)
  • ¼ cup almond roughly chopped, plus more for topping, raw
  • 1 Tablespoon Flaxseed ground
  • 1 Tablespoon coconut oil melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt sea salt

Instructions

  1. Preheat the oven to 375°F and spray an 8×8 square baking dish with cooking spray.
  2. Add all the ingredients to a large mixing bowl and stir to combine.
  3. Carefully pour oatmeal mixture into the prepared baking dish.
  4. Top with additional shredded coconut, chocolate chips and almonds.
  5. Bake for 40-45 minutes, until toothpick comes out clean.
  6. Let cool for 10-15 minutes then portion into 6 pieces and serve warm with an additional drizzle of maple syrup if desired.
