Amaretti Cookies
Description
Amaretti Cookies combine almond flour, sugar, and lemon zest to provide gentle citrus notes alongside the almond flavor. The recipe requires beating egg whites to soft peaks and folding them into the dry ingredients, yielding a moist dough with a slightly sticky consistency that holds its shape well. Rolling the dough balls in sugar before baking creates a sweet, delicate crust. Baking at a moderate temperature until golden ensures a tender texture with a crisp, browned underside.
The cookies expand and develop cracks as they bake, so ample spacing on the baking sheet avoids sticking. Once cooled, they offer a balanced chewiness with a soft center and lightly crisp edges. These cookies pair nicely with warm beverages and serve well as a light dessert or snack.
For storage, they keep well at room temperature in an airtight container for about a week. They can also be frozen after cooling; to do so, freeze in a single layer initially, then store in a sealed container for up to six months, ensuring freshness for future use.
Ingredients
- 2 ⅔ cup almond flour
- 1 cup sugar
- 1 tablespoon lemon zest
- 3 large egg white
- 1 teaspoon almond extract
- ¼ cup sugar for rolling
Instructions
- Preheat Oven: Preheat your oven to 325°F. Line 2 baking sheets with parchment paper.
- Combine Dry Ingredients: In a large bowl add the almond flour, 1 cup of sugar and lemon zest. Whisk well.
- Combine Wet Ingredients: To the bowl of your mixer add the egg whites and beat to a soft peak. Whisk in the almond extract.
- Fold Together: Gently fold in the egg whites into the dry ingredients until the dough is moist.
- Form Cookies: Use a small cookie scoop to scoop out equal amounts of dough, then roll into balls with slightly damp hands. Roll through the remaining ¼ cup of sugar. Place cookies on prepared baking sheets.
- Bake and Cool: Transfer the baking sheets to the oven and bake for 25 minutes or until the cookies start to slightly turn golden and bottom is golden brown. Cool completely on cooling racks.
Notes
- The dough will be sticky but firm enough to hold shape on the baking sheet.
- Cookies expand and crack while baking; space them well apart.
- Store cooled cookies airtight at room temperature for up to a week.
- Freeze completely cooled cookies individually before transferring to airtight containers for up to 6 months.
