Amaretti Cookies Italian Almond Cookies

Amaretti Cookies are chewy Italian almond cookies made from ground almonds, sugar, egg white, and almond extract. Rolled into small balls and baked until golden, they offer a sweet, nutty flavor with a tender interior and slightly crisp exterior.

Description

Amaretti Cookies blend ground almonds with sugar, egg white, and almond or vanilla extract to form a pliable dough. The dough is shaped into small balls and baked at 170°C (340°F) until they acquire a light golden color, developing a delicate crust surrounding a chewy, almond-flavored center. Using freshly ground almonds enhances the texture and flavor.

These cookies are traditionally served plain or dusted with icing sugar. They provide a distinctly nutty sweetness and are enjoyed as a snack or dessert. Their size and density make them easy to serve alongside coffee or tea.

To prepare your own ground almonds, roast whole almonds briefly and pulse in a food processor with sugar once cooled. Store any extra ground almonds in the freezer. Baked cookies keep best in an airtight container at room temperature for a few days or frozen for longer storage.

  • cups ground almonds not almond flour
  • ¼ cup granulated sugar 81 grams total, + 2 1/2 tablespoons
  • 1 large egg white, room temperature
  • ½ teaspoon almond extract or vanilla extract

Instructions

  1. Pre-heat oven to 340°F  (170° celsius).  Line a large cookie sheet with parchment paper.
  2. If making your own from whole almonds, in a food processor add the cooled almonds and sugar and pulse for 20 seconds until very fine.  Then add egg white (or whites) and almond flavouring again pulse for 30 seconds until mixture comes together.
  3. If using ground almonds then in the food processor add the ground almonds, sugar, flavouring and egg white and combine.
  4. Roll the dough into small balls (or if using 2 egg whites drop by spoonfuls) and place them about an inch apart on the prepared cookie sheet, sprinkle with a little granulated sugar if desired. Bake for approximately 17 -23 minutes or until golden*.  Let cool completely, sprinkle with icing sugar before serving if desired. Enjoy!

*Depending on how baked you like them, my kids prefer them on the lighter side (17 minutes and my husband the more traditional Italian cookie about 23 minutes).

Notes

  • To make ground almonds, roast whole almonds at 350°F (180°C) for 10 minutes and cool before processing with sugar to a fine texture.
  • Approximately 2 cups of whole almonds yield 1¼ cups ground almonds for this recipe.
  • Extra ground almonds can be frozen for up to 6 months for future use.
  • Baked cookies should be stored airtight at room temperature for up to three days or frozen for up to six months.
