Description

Andes Mint Cookies start with a dough made by heating butter, brown sugar, corn syrup, and semi-sweet chocolate chips until melted and smooth. This warm mixture is combined with flour, baking soda, salt, and eggs to form the cookie dough. Rounded spoonfuls are shaped and flattened on a cookie sheet before baking. Immediately after baking, one or two Andes mints are placed on each hot cookie, melting to form a glossy mint chocolate layer.

The cookies have a tender base with a sweet, slightly fudgy texture, complemented by the cooling mint topping which firms up as the cookies cool. They offer a distinctive mint-chocolate flavor combination unique to the Andes mints.

  • 3/4 c. butter
  • 1 1/2 c. brown sugar
  • 2 Tbsp. white corn syrup
  • 12 ounces chocolate chips semi-sweet
  • 2 1/2 c. flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp. salt
  • 2 egg
  • 2-3 packages Andes mints candy

Instructions

  1. Heat butter, sugar, corn syrup, and chocolate chips in a small saucepan until chocolate chips are melted.
  2. Remove from heat and pour into a large mixing bowl and add flour, baking soda, and salt. Then beat in eggs one at a time.
  3. Shape rounded tablespoons into balls and place on a cookie sheet. Lightly press each ball to flatten.
  4. Bake at 350 for 9-11 minutes. Right when removing from the oven, while still hot, place one to two Ande's Mint on top of each cookie (I like to do two).
  5. When they melt smooth the chocolate evenly over the top. Cool completely at room temperature and let chocolate harden before serving.
