  • 3/4 cup granulated sugar 150 grams
  • 1/2 cup milk 4 ounces, 2%
  • 1/2 cup vegetable oil 4 ounces
  • 1 large egg
  • 1 teaspoon vanilla extract 5 grams
  • 2 cups all-purpose flour 260 grams
  • 2 teaspoons baking powder 8 grams
  • 2 teaspoons cinnamon 4 grams
  • 1/4 teaspoon salt
  • 2 cups apple peeled and cored) 2-3 apples, diced, fresh

For the Glaze:

  • 1/2 cup powdered sugar 65 grams
  • 1/2 teaspoon cinnamon
  • 2-3 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350ºF.
  2. In a medium bowl, stir together the sugar, milk, oil, egg and vanilla. In a separate bowl, combine the flour, baking powder, cinnamon and salt. Add the dry ingredients to the wet ingredients and stir until just combined. 3/4 cup granulated sugar, 1/2 cup 2% milk, 1/2 cup vegetable oil, 1 large egg, 1 teaspoon vanilla extract, 2 cups all-purpose flour, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1/4 teaspoon salt
  3. Fold the diced apples gently into the batter. 2 cups diced fresh apples
  4. Pour the bread batter into a greased 8 1/2 x 4 1/2" loaf pan. Bake for 50-60 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
  5. To make the glaze, combine the powdered sugar and cinnamon in a small bowl. Add 2 tablespoons of heavy cream. Mix until it is smooth. Add more heavy cream, one tablespoon at a time, until the glaze is thin enough to spread or drizzle (whichever is desired). 1/2 cup powdered sugar, 1/2 teaspoon cinnamon, 2-3 tablespoons heavy cream
  6. Once the bread is cool, spread the glaze on top of the bread. Slice and serve.

Notes

  • Store the bread in an airtight container in the refrigerator to keep it fresh longer.
  • The glaze recipe yields enough for a light drizzle; double the recipe if you prefer more coverage.
