Ingredients
- 1 cup quinoa cooked
- 1 cup oats uncooked
- 1 cup chopped apples
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ cup maple syrup
- 2 eggs lightly beaten

Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, add your cooked quinoa, oats and apple.
- In a separate smaller mixing bowl, combine cinnamon, nutmeg, maple syrup and eggs and mix until combined.
- Then add spice mixture to quinoa mixture and toss until blended well.
- Coat or spray your mini muffin pan with coconut oil or non-stick cooking spray. Put a little oil on the top of the pan as well for any over flow.
- Fill each muffin hole with 1 tablespoon of the mixture.
- Bake for about 15-20 minutes.
