Description
This apple coleslaw recipe brings together crunchy cabbage, sweet-tart apples, crisp carrots, and toasted almonds for a layered texture experience. The mix also includes craisins for bursts of sweetness and finely minced parsley for freshness. Sliced green onions add mild sharpness.
The dressing balances creaminess from Greek yogurt and mayonnaise with acidity from apple cider vinegar, Dijon mustard’s pungency, and a hint of honey's sweetness. Poppy seeds introduce a subtle crunch. After whisking the dressing, it is combined evenly with the vegetables to coat them well.
Though it can be eaten immediately, letting the slaw chill for a couple of hours enhances flavor melding and softens the cabbage slightly. The toasted almonds added just before tossing bring warmth and a nutty note that complements the crisp produce.
Ingredients
- 1/2 cup almonds slivered
- 1 green cabbage shredded (about 7-8 cups, small head
- 2 carrot cut into matchsticks, large
- 2 apple cut into matchsticks (I used Fuji, large
- 1/2 cup green onion sliced
- 1/2 cup craisins
- 1/4 cup parsley very finely minced
For the dressing:
- 1/2 cup Greek yogurt fat-free, plain
- 1/2 cup mayonnaise
- 3 Tbsp Dijon mustard
- 2 Tbsp + 1 tsp apple cider vinegar
- 2 Tbsp honey
- 1/2 tsp poppy seeds
- 1/4 tsp salt
Instructions
- Heat your oven to 350 degrees F. Spread the almonds in a small pan and cook until lightly browned and toasted, about 5-7 minutes.
- In a large bowl, stir together all the salad ingredients.
- In a medium bowl, whisk all the dressing ingredients together.
- Pour the dressing over the salad and toss to coat.
- DEVOUR immediately, but best if you cover it and refrigerate for at least 2 hours!
