Description

Ingredients
- 10 oz. lettuce or baby spinach, spring mix
- 10 oz. spinach or baby spinach, spring mix
- 3 medium apple cored and thinly chopped, Gala
- 1 cup pecans toasted and chopped
- 1 cup crumbled feta cheese crumbled
- 1/2 cup dried cranberries
- 12 oz. Bacon cooked and chopped
- 1/2 small red onion sliced into thin strips
Maple-Cider Vinaigrette
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 2 Tbsp pure maple syrup
- 1 Tbsp Dijon mustard
- 1/4 tsp salt or to taste
- 1/4 tsp black pepper freshly ground
Instructions
- Make the dressing: Mix all ingredients in a bowl until well blended. Or add to a mason jar cover with lid and shake to blend well.
- In a large salad bowl layer together lettuce blend, apples, pecans, feta, cranberries, bacon, and red onion.
- Drizzle dressing over salad and toss to evenly coat.
- Serve immediately after adding dressing.
