  • 3 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 15 ounces chickpeas rinsed and drained
  • 1 apple cored and cut into thin strips, large
  • 3 green onion sliced
  • 1 celery diced, rib
  • 1/4 cup Pepitas
  • 1/4 cup dried cranberries optional
  • 2 tablespoons parsley finely chopped
  • tahini dressing
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground
  • lemon juice for serving, fresh squeeze

Instructions

  1. In a large bowl, combine the cabbage, chickpeas, apple, green onion, celery, pepitas, cranberries (if using), and parsley. Season with salt and pepper, to taste.
  2. Make the tahini dressing and pour it over the slaw. Use tongs to toss until the slaw is evenly coated with the dressing.
  3. Squeeze a little fresh lemon juice over the top and enjoy!

Notes

  • Keep leftovers refrigerated in an airtight container and consume within two days for best freshness.
