Apricot thyme jam {Vegan, GF}
Description
This apricot jam highlights ripe apricots sweetened with sugar and accented by fresh thyme. The fruit is washed, halved, pitted, and combined with sugar, then allowed to macerate for several hours or overnight to extract juices and dissolve the sugar. Adding thyme sprigs during cooking infuses a delicate herbal undertone.
The jam is cooked steadily until thick and clear, approximately 30 minutes, then ladled into sterilized jars with sterile lids. The filled jars are processed again in a hot water bath to seal and ensure preservation, then rested overnight to confirm proper sealing. The finished jam offers a balance of floral fruitiness with a subtle thyme note, great for spreading on bread or using in desserts.
Sterilization of jars and lids is essential for safe storage. The jam keeps well when properly sealed and stored in a cool, dark place.
Ingredients
- 3 lb apricots 1.4kg
- 1.5 lb sugar 700 grams
- ¼ cup water if needed
- thyme sprigs handful
Instructions
- Wash, clean, halve and pit apricots. Sprinkle sugar over fruit and let stand for a minimum of three hours or overnight.
- Sterilize jars in a hot water bath.
- Add mixture to a flat bottomed pan or pot; if there is not enough liquid to cover fruit, add water. Add thyme. Bring to a boil and cook steadily about 30 minutes, stirring occasionally, until jam is thick and clear.
- Ladle jam into sterilized jars, leaving only a ½-inch of headspace. Seal with sterilized lids, and process for an additional 10 minutes. Let jars rest on counter, untouched, overnight, to ensure they have sealed properly (the indent in the middle of the lids should pop inward).
