Arroz con Fideos | Bil Shareyah [+ Video]
Description
Arroz con Fideos | Bil Shareyah involves toasting angel hair pasta in vegetable oil until golden to develop a nutty aroma and crisp texture. Uncooked rice is then stirred into the pot so each grain is coated with oil and toasted lightly. Pouring boiling chicken broth over the rice begins the simmer, infusing flavor as the rice absorbs the liquid and becomes tender. Regular stirring prevents sticking during the initial simmering phase. Additional oil is added near the end for richness, and the dish is finished by covering and gently steaming to achieve a firm yet tender texture.
The browned pasta strands offer a pleasantly crisp bite contrasting the softness of the rice. This dish serves as a versatile component alongside protein-rich mains like meats or seafood and traditional side beans, making for a balanced meal.
The broth should be salted prior to use according to taste, as it seasons the rice. Cover tightly when simmering to trap steam and ensure even cooking. Fluff the rice gently before serving to separate grains and distribute the enriched oil coating.
Ingredients
- 5 tablespoons vegetable oil (peanut, corn or soy), divided
- ½ cup angel hair pasta slightly crushed
- 2 cup rice
- 2 cup chicken broth boiling hot (see notes, or vegetable broth
Instructions
1. Browning the noodles
- In a deep bottom pot heat 3 tablespoons of oil, over medium heat. Add the noodles (uncooked) and cook and stir until they are golden brown, being careful not to let them burn.
2. Cooking the rice
- Stir in the rice, mix until all the rice is coated with oil. Pour in the boiling broth to the rice and stir. Simmer over medium heat. Stir regularly to prevent the rice from sticking. When almost all the liquid has evaporated, cover with a tight-fitting lid and simmer over very low heat for 15 minutes. Uncover, stir, add the remaining oil, stir again and cover with the lid. Simmer 5 more minutes over very low heat. Try the rice, it should be firm but tender inside. If necessary, cover and simmer another 5 minutes over very low heat.
3. Serving
- Fluff rice and serve warm. Best served with meat (or seafood), a side dish and beans.
Notes
- Use broth salted to taste before adding to the rice to control overall seasoning.
- Cover tightly during final simmer to retain steam and cook rice evenly.
- Fluff rice gently before serving to separate grains and distribute oil.
- Serve warm, paired with meats, seafood, or beans for a complete meal.
