  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 4 cups arugula
  • ¼ cup Thinly sliced red onion
  • ¼ apple (such as Pink Lady or Honeycrisp) , cut into matchstick slices
  • ¼ cup shaved Parmesan cheese

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, honey, and salt and pepper.
  2. Add the arugula to the bowl and toss. Top with red onion, apple, and Parmesan, and more pepper to taste.
