  • 6 ounces ramen noodles broken into pieces (2 packs, chicken-flavored
  • 1 cup cashew pieces
  • 16 ounces broccoli slaw (1-2 bags)
  • ¾ cup sunflower seeds shelled
  • cup green onions thinly sliced

For the Dressing

  • cup olive oil
  • cup granulated sugar
  • ¼ cup rice vinegar
  • 1 ramen seasoning packet chicken flavor

Instructions

  1. Preheat your oven to 425 degrees F. Place broken noodles and cashews on a baking sheet and bake for 6 minutes. Stir and bake another 2-3 minutes until lightly toasted. Remove from the oven and let cool.
  2. Mix together the broccoli slaw, sunflower seeds, green onions, and toasted noodles and cashews in a large mixing bowl.
  3. Place all dressing ingredients in a jar and shake. Pour over salad, toss to coat, and serve.
