Description

This Zabaione recipe features just three main ingredients: egg yolks, sugar, and Marsala wine. The yolks and sugar are beaten until pale and smooth, then combined with Marsala and cooked over a bain-marie. Continuous whisking thickens the mixture over 10 to 15 minutes to a luscious custard that holds gentle peaks and a rich, velvety texture.

The flavor balances sweetness with the distinctive dry aroma of Marsala wine. Zabaione is light yet creamy, with a delicate warmth from the gentle cooking process. It can be served on its own or enhanced with a dusting of cocoa powder or fresh berries for contrast and color.

  • 2 egg yolk
  • 2 tablespoons sugar
  • 2 tablespoons marsala wine

Instructions

  1. In a medium bowl with an electric hand beaters beat the egg yolks and sugar until smooth and pale yellow (and sugar has dissolved) approximately 2-3 minutes, add the Marsala wine and beat to combine for approximately 1 minute.
  2. Place the bowl over a small pot of simmering hot water over low heat (make sure the bowl is not touching the water) continue beating until you reach the desired thickness, approximately 10-15 minutes.
  3. Pour into dessert glasses or bowls, serve immediately or at room temperature. Sprinkle with cocoa, shaved chocolate or even fresh berries. Enjoy!

Notes

  • Marsala wine is traditional, but Madeira, Sherry, Port, or other dry sweet wines can be used; adjust sugar accordingly if the wine is sweeter.
  • Serve Zabaione warm or at room temperature for best texture and flavor.
  • Store leftovers in airtight containers or covered dishes in the refrigerator for up to 3-4 days.
  • Before serving stored Zabaione, whisk it again for 1-2 minutes to refresh the texture.
