This recipe for avocado fries is slices of avocado that are breaded and lightly fried to crispy golden brown perfection. The ultimate appetizer or side dish for avocado lovers!

Ingredients
- 2 large avocados avocados should be firm
- 1/2 cup all purpose flour
- 1 tablespoon chili powder
- 2 teaspoons salt divided use
- 2 eggs beaten
- 1 1/2 cups panko breadcrumbs
- 1/3 cup vegetable oil

Instructions
- Peel and seed the avocados and cut them into 1/2 inch slices.
- In a small bowl, mix together the flour, chili powder and 1 1/2 teaspoons salt.
- In another small bowl, beat 2 eggs.
- Place panko breadcrumbs on a plate or a shallow bowl.
- Dredge each avocado slice in the flour, then dip it into the eggs and roll it in panko crumbs. Repeat with all avocado slices
- Heat the oil in a large pan over medium-high heat. Add a single layer of avocado slices to the pan. Cook for 2-3 minutes per side or until golden brown. Drain on paper towels.
- Repeat the cooking process with the remaining avocado slices.
- Sprinkle the avocado slices with the remaining 1/2 teaspoon of salt and serve immediately, with dipping sauces if desired.
Notes
- You want to be sure that you're using ripe, firm avocados here so that they hold up to the breading and frying process.
- You don't need a lot of oil for this, a 1/4 inch layer of vegetable oil on the bottom of the pan is fine.
- You'll need to cook the avocado slices in batches. If you end up with a lot of dark bits at the end of the first few batches, carefully wipe out the pan and add a new layer of oil on the bottom.
