Ingredients
- 2 firm-ripe avocados
- ¼ cup flour
- 1 teaspoon salt
- 2 large eggs beaten
- 1 ¼ cups Italian Seasoned Panko Bread Crumbs
- salt to taste
Instructions
- Preheat your oven to 450 degrees F.
- Cut each avocado in half and remove the pit. Then use a large spoon to remove the flesh from the peel. Slice each avocado half into 1/2-inch wedges. You should get about 20 wedges total.
- Set up a dredge station using 3 shallow bowls. Put flour in the first bowl, beat the eggs in the second bowl, and put the bread crumbs in the third bowl.
- Bread the avocado wedges first in the flour so they are coated. Then dip into the eggs, and finally press into the bread crumbs until thoroughly breaded.
- Arrange the avocados onto a wire rack placed over a baking sheet. Spray the tops of the wedges with olive oil spray or butter-flavored cooking spray and then sprinkle with some salt.
- Bake for about 20 minutes, or until golden brown. Remove from the oven and serve warm with your favorite dipping sauce.
