Avocado Salsa Verde

Avocado Salsa Verde blends roasted tomatillos with jalapeño, onion, garlic, fresh cilantro, and creamy avocado. The tomatillos provide brightness and acidity balanced by the smooth avocado, while the jalapeño is added gradually to control the heat level. This fresh sauce offers a mild spicy flavor with herbaceous and tangy undertones, ideal as a dip, topping, or accompaniment to various dishes.

Description

Avocado Salsa Verde starts with husked and rinsed tomatillos, roasted until they turn an army green color, building a lightly charred depth to the sauce. These are blended with half an onion, a garlic clove, cilantro sprigs, and jalapeño pepper added in increments to control spiciness and suit taste preferences.

Adding ripe avocado at the end creates a creamy texture that mellows the tang from the tomatillos and balances the heat from the pepper. Salt is adjusted to taste, rounding out the flavor profile which combines tartness, creaminess, mild herbaceousness, and gentle heat.

This salsa is best served immediately to preserve its fresh flavor and vibrant colors. It pairs well as a condiment for grilled meats, tacos, chips, or eggs, bringing contrast and richness to various dishes.

The notes suggest adding jalapeño cautiously when first making the recipe, to find the preferred heat level without overwhelming. Using fresh tomatillos is ideal since canned tomatillos don’t roast the same way and lose some texture and flavor complexity. Keeping some tender cilantro stems while discarding thicker ends maintains flavor without adding bitterness.

Ingredients

Servings
  • 4 tomatillos
  • 1 jalapeño (or 1 serrano)
  • 1/2 onion
  • 1 garlic clove
  • 10-12 cilantro sprigs
  • 1 avocado
  • salt to taste

Instructions

  1. Pull the husks off the tomatillos and give them a good rinse.
  2. Cut the stems out of the tomatillos if you want.
  3. Roast the tomatillos in the oven for 10-15 minutes or until they start to turn army green
  4. Add tomatillos to a blender or food processor along with ½ onion, 1 garlic clove, 10-12 sprigs cilantro, and ½ of the jalapeno
  5. Pulse blend and taste for heat level
  6. If you want more spice add more jalapeno (either ¼ or ½ more)
  7. Once happy with the heat level, add the avocado to the blender and combine well
  8. Salt to taste
  9. Serve immediately

Notes

  • Add jalapeño gradually at first to adjust heat according to personal preference and sensitivity to spice.
  • Use fresh tomatillos for roasting; canned tomatillos lack the same texture and flavor impact after roasting.
  • Include tender cilantro stems but remove the thicker bottom parts to keep flavor balanced.
  • Serve the salsa immediately after preparation to enjoy its fresh, vibrant qualities at their best.
