Avocado sorbet
Description
The sorbet starts by blending ripe avocado halves with peeled cucumber, fresh cilantro, lime juice, and optional seeded jalapeño for mild heat. After blending and seasoning with salt, the mixture is chilled and then either churned in an ice cream maker until creamy and firm or frozen in a container with periodic blending to break ice crystals.
This preparation results in a creamy, smooth sorbet with subtle spice and fresh herbal notes provided by cilantro and jalapeño. The lime juice adds acidity to brighten the flavors, and the cucumber imparts a clean, cooling contrast to the richness of avocado.
Avocado sorbet stands out as a refreshing palate cleanser or dessert, especially during warm weather occasions, offering an alternative to traditional fruit sorbets with its creamy texture and nuanced flavor profile.
Ingredients
- 2 avocado
- 2 cucumber peeled or not
- ½ cilantro bunch
- 1-2 jalapeños seeded and deveined, optional
- lime juice juice of 2 limes
- salt to taste
Instructions
- Combine all the ingredients in a blender or food processor, blend until smooth, then taste and adjust salt/seasonings to taste.
- If using an ice cream maker, add the avocado sorbet mix and prepare according the machine’s instructions.
- Transfer the sorbet to a container and freeze for an hour or two before serving.
- To prepare it without an ice cream machine, pour the blended mix into a freezer friendly container and freeze for about an hour or two. The avocado mix should be almost frozen, but not completely. Use an electric mixer, blender or food processor - make sure it can candle frozen mixes before using - to mix it until smooth. Return the avocado mix to the freezer and repeat again in a few hours. For an avocado cucumber granita, use a fork to mix it up, repeat the process every couple of hours for a few times.
