Bagna Cauda (Warm Anchovy and Garlic Sauce)

This delectable Anchovy & garlic sauce from Piemonte, Italy is a flavour bomb of salty anchovies with garlic and oil. Bagna Cauda is packed full of flavour and the perfect sauce to dip vegetables and meat into. It's a crazy delicious little treasure to have up your sleeve.

Ingredients

Servings
  • 1 bulb garlic peeled
  • ½ cup extra virgin olive oil
  • 100 g jar of anchovy fillets in their oil

Suggested Accompaniments (my favourites)

  • crusty bread (cut into small pieces, to dip into the sauce)
  • Radicchio leaves (to dip into the sauce)
  • red peppers (roasted, then peeled and cut into slices) - I spoon a little sauce over these.

Instructions

  1. Peel and finely chop the garlic cloves and place in a small pan with the extra virgin olive oil.
  2. Turn on the heat to medium and let the garlic come up to a gentle simmer.
  3. Add ½ cup of water and stir well. Let this sizzle for around 5 minutes until the water has evaporated and the garlic is gently frying again.
  4. Add the anchovy fillets and their oil into the pan.
  5. Let this begin to sizzle gently too. Fry for about 5 minutes, breaking up the anchovies with a wooden spoon.
  6. Remove from the heat and pour into a small jug and pulse blitz 2-3 times with an immersion blender to blend the sauce a little.
  7. Serve warm in a bowl with your chosen vegetables and/or bread to dip and dress with the sauce.
  8. If you have a bagna cauda heater then pour some of the sauce into that and keep warm with a tea-light candle. Top up with sauce as needed.
