  • 3 pounds orange yam or other sweet potato, peeled and cut in half or cubed
  • 6 tablespoons butter melted
  • ¾ cup brown sugar
  • cup white sugar
  • 1/3 cup orange juice
  • 1 tablespoon vanilla extract
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves ground
  • ¼ salt

Instructions

  1. Grease a 9×13 baking dish with cooking spray. Preheat the oven to 375 degrees.
  2. Peel the yams with a peeler. Slice the yams in half the long way. Slice into half in half moon shaped pieces. Add all yams to the baking dish.
  3. In a medium-sized bowl add the melted butter, brown sugar, white sugar, orange juice, vanilla extract, cinnamon, ginger, nutmeg, ground cloves, and salt. Stir until well mixed.
  4. Pour the butter and sugar mixture over the yams. Gently stir to coat the yams evenly with butter.
  5. Place the baking dish in the oven and bake for 30 minutes.
  6. Remove the baking dish and baste the yams with the butter sauce with a silicone brush or spoon.
  7. Return the baking dish to the oven and bake for an additional 15-20 minutes or until sweet potatoes are golden and tender when pierced with a fork. Serve and enjoy! The sauce will continue to thicken as the yams begin to cool.
