Baked Herbed Sweet Potatoes and Feta

You don't even feel like these baked herbed sweet potatoes and feta are healthy for you since they are so delicious, but they are!

Ingredients
- 2-3 large sweet potatoes peeled and sliced into 1 cm thick slices
- 1/2 cup olive oil
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1-2 teaspoons salt
- 1/2 cup herbed feta cheese

Instructions
- Preheat your oven to 400 °F.
- In a large bowl, toss together the potatoes, oil, rosemary, thyme and salt.
- Place on a large baking sheet and move until the sweet potatoes are in one layer.
- Bake for 30-35 minutes, then once they are almost ready, sprinkle the herbed feta cheese on top.
- Bake for 10 minutes more or until the feta cheese becomes browned.
- Remove and serve.
Notes
- This is extremely adaptable to your tastes. I love LOTS of Rosemary on these and use more than what I've written.
