  • 4 egg large
  • 1 avocado chopped
  • cilantro fresh leaves
  • 4 corn tortillas plus extra at the table for mopping everything up

Instructions

  1. Preheat oven to 375° Farenheit.
  2. Lightly spray a 10" oven-safe skillet or baking dish with cooking spray.
  3. Add salsa and beans and spinach to the skillet, stirring together.
  4. Sprinkle evenly with the cheese.
  5. Make four depressions, evenly spaced, with the back of a spoon, then add an egg to each depression.
  6. Wrap tortillas in foil and put them in the oven.
  7. Bake eggs 15-20 minutes, until egg whites are cooked but yolks are still jiggly.
