Description
Baked Parmesan Crisps are prepared by scooping small mounds of shredded Parmesan cheese spaced apart on parchment-lined baking sheets and then gently flattened. Baking at 350°F for 10 to 12 minutes produces golden, crispy disks. Optional pepperoni slices placed atop some crisps before baking contribute a meaty element and visual variety.
The crisps have a crunchy texture and a concentrated nutty and salty taste from the Parmesan cheese. They are easy to prepare with just a few ingredients and bake quickly without additional flour or binding agents.
Serve these crisps as a low-carb snack, appetizer, or garnish. Plain crisps store best at room temperature in a sealed container for up to three days but lose some crispness over time. Those with pepperoni topping keep better refrigerated and reheat briefly in the microwave to refresh texture. Freezing is possible but reduces crispness.

- 12 tablespoons Parmesan Cheese shredded, not grated
- 6 pieces pepperoni optional
Instructions
- Preheat your oven to 350°. Line a rimmed baking sheet with parchment paper.
- Using a measuring tablespoon, scoop small mounds of the cheese onto the baking sheet, keeping them about an inch apart.
- Gently flatten the mounds with your fingers.
- If you'd like, you can top half of the mounds with pepperoni slices.
- Bake the cheese mounds until browned and crisp, 10-12 minutes.
- Let them cool for a minute on the baking sheet, then transfer them to a cooling rack and let them cool for five more minutes before enjoying them.
