Baked Peach Almond Oatmeal combines rolled oats with chopped peaches and almonds for a hearty breakfast baked to a golden finish. Flavored with cinnamon, vanilla, and almond extracts, the oatmeal sets in the oven until firm with a lightly crisp top. The peaches provide juicy fruitiness while almonds add crunch, making a warm, comforting dish served best fresh and warm.

Description

This Baked Peach Almond Oatmeal features rolled oats mixed with brown sugar, baking powder, cinnamon, and chopped almonds for texture and flavor. The mixture is layered over fresh chopped peaches arranged in a greased baking dish, allowing the fruit’s juices to meld with the oats during baking.

The wet ingredients include almond milk, eggs, melted coconut oil, and extracts that infuse the oatmeal with almond and vanilla notes while helping bind it as it bakes. The topping can be garnished with optional peach slices for visual appeal.

Baked at 350 degrees Fahrenheit, the oatmeal cooks until it firms up and develops a golden color on top. The texture balances soft oats with tender peaches and crunchy almonds, creating a filling and flavorful morning meal.

This dish reheats well with a splash of almond milk to maintain creaminess. It can be doubled for larger portions or made gluten-free by using certified gluten-free oats.
