  • 1 cup steel cut oats
  • 1 Tablespoon chia seeds

  • 2 Tablespoons coconut oil melted

  • 2 teaspoons vanilla
  • ¼ teaspoon salt sea salt
  • 2 cups almond milk at room temperature, unsweetened
  • ½ cup pecans chopped and divided, or walnuts
  • 2 banana divided (one mashed and one sliced, ripe

Instructions

  1. Preheat oven to 375°F. Spray an 8x8 pan.
  2. In a large mixing bowl mash one banana using a fork. Then add oats, chia seeds, maple syrup, coconut oil, cinnamon, vanilla and sea salt. Stir well to combine. Add in almond milk, and half the nuts. Stir everything together once more.
  3. Place oatmeal mixture into a greased baking dish. Scatter the remaining nuts and banana slices across the top.
  4. Bake in the oven for 50-60 minutes or until oatmeal is golden brown and the center is cooked through. Remove from the oven, let cool and enjoy.
  5. Place any leftovers in a sealed container in the fridge. Reheat later and enjoy.
