Description
These muffins mix whole wheat flour with brown sugar, salt, and baking powder, incorporating fresh blueberries into the dry ingredients to distribute them evenly. In a separate bowl, mashed bananas, egg, milk, and vegetable oil are combined and then folded gently into the dry mix to avoid overmixing, which would toughen the muffins.

Ingredients
- 2 cups whole wheat flour
- 1/2 cup brown sugar
- 2 banana ripe and mashed with a fork
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 cup milk or 2%, whole, 2 teaspoons
- 1/4 cup vegetable oil
- 1 egg large
- 2 cups blueberries fresh and washed
Instructions
- Preheat oven to 400 Degrees Fahrenheit
- Line a muffin tin with paper muffin liners
- In one bowl mix the brown sugar, flour, salt and baking powder. When mixed, add the blueberries and mix again
- In another bowl, mix the egg, mashed banana, milk and oil
- Add the liquid ingredients to the flour mixture and mix with a spoon until combined. DO NOT OVERMIX
- Spoon the batter into each muffin liner
- Bake for 15-20 minutes

Notes
- All-purpose flour may be used instead of whole wheat; reduce milk to 1 cup in that case to maintain the correct batter consistency.
