Banana Blueberry Muffins

Banana Blueberry Muffins combine whole wheat flour, mashed ripe bananas, and fresh blueberries for moist muffins with a subtly sweet flavor. Brown sugar and baking powder provide sweetness and leavening, while vegetable oil, egg, and milk make the batter tender. The muffins are baked to a golden top and soft texture inside, making them suitable for breakfast or snacks.

Description

These muffins mix whole wheat flour with brown sugar, salt, and baking powder, incorporating fresh blueberries into the dry ingredients to distribute them evenly. In a separate bowl, mashed bananas, egg, milk, and vegetable oil are combined and then folded gently into the dry mix to avoid overmixing, which would toughen the muffins.

The batter is portioned into lined muffin tins and baked at a relatively high temperature to achieve a slightly crisp, golden top while retaining moistness inside. The ripe bananas contribute natural sweetness and moisture, complemented by bursts of blueberry flavor throughout.

These muffins serve well as a wholesome breakfast treat or snack. Using whole wheat flour provides a nuttier flavor and firmer texture, while the recipe allows swapping to all-purpose flour by reducing milk volume slightly for balance.

  • 2 cups blueberries fresh and washed

Instructions

  1. Preheat oven to 400 Degrees Fahrenheit
  2. Line a muffin tin with paper muffin liners
  3. In one bowl mix the brown sugar, flour, salt and baking powder. When mixed, add the blueberries and mix again

  6. Spoon the batter into each muffin liner

Notes

  • All-purpose flour may be used instead of whole wheat; reduce milk to 1 cup in that case to maintain the correct batter consistency.
