This banana bread baked oatmeal tastes just like banana bread in oatmeal form and is great for meal prepping!

Ingredients
- 2 large bananas mashed
- 1 egg
- 1 1/2 cups milk I used unsweetened vanilla almond milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 2 1/4 cups rolled oats
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Add the bananas to a large mixing bowl and mash them. Add in the egg, milk, maple syrup, and vanilla and whisk everything together until combined.
- Add the oats, cinnamon, nutmeg, salt, and baking powder to the mixing bowl and stir everything together until combined.
- Pour the oat mixture into an 8×8 or similar size baking dish sprayed with cooking oil. Top with sliced bananas if desired.
- Bake at 350° F. for 40-50 minutes or until the oatmeal is set and golden brown around the edges. Let it cool for at least 10 minutes before cutting into it. Serve with maple syrup, nut butter, and extra sliced bananas if desired.
