Banana Bread Baked Oatmeal Recipe

This Banana Bread Baked Oatmeal combines ripe mashed bananas, cinnamon, nutmeg, and oats into a baked dish reminiscent of banana bread with a soft and custardy texture. The mixture is poured into a pan and baked until set, offering a comforting, warm breakfast option. It can be served with sliced banana, yogurt, and maple syrup to add creaminess and sweetness.

Description

The Banana Bread Baked Oatmeal incorporates mashed ripe bananas and classic baking spices like cinnamon and nutmeg into a mix of eggs, almond milk, oats, and baking powder. The batter is fairly liquid before baking, which transforms in the oven to a softly set baked oatmeal that features a moist, tender crumb similar to banana bread but with an oat-forward texture.

Baked in a 9x9-inch pan, it is cooled slightly before slicing into squares. Serving it with sliced banana and a dollop of yogurt adds freshness and creaminess, while maple syrup can enhance sweetness further if desired. This dish works well for a warm breakfast or brunch with a hearty, cozy character.

The recipe flexibility allows optional mix-ins like chopped walnuts or chocolate chips to add texture and flavor. The dish can be eaten shortly after baking but is firmer and easier to slice after cooling.

Ingredients

Servings
  • 2 banana mashed, ripe
  • 2 large egg lightly beaten
  • 2 cups almond milk unsweetened
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract optional, pure
  • 2 cups gluten-free rolled oats or quick oats
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg optional
  • 1 tsp baking powder
  • ¼ tsp salt

For Serving

  • banana sliced
  • yogurt
  • maple syrup

Instructions

  1. Preheat the oven to 350 degrees F and line a 9” x 9” baking pan with parchment paper.
  2. Mash the bananas in a mixing bowl until creamy. You can leave some chunks if you like them!
  3. Whisk in the almond milk, eggs, and vanilla extract until everything is well-combined.
  4. Pour in the rolled oats, cinnamon, nutmeg, baking powder, and sea salt and stir until well-combined. The mixture will appear fairly watery. This is normal! Note: If you’re adding chopped walnuts or chocolate chips, do so now.
  5. Pour the oatmeal mixture into the prepared pan and smooth into an even layer.
  6. Bake on the center rack of the oven for 40 to 50 minutes, or until the baked oatmeal has set up. Allow the baked oatmeal to cool for at least 30 minutes before slicing and serving. Note: You can serve it sooner without allowing it to cool, but it will fall apart rather than stay held together in a square oat bar.
