Banana Fudge

This banana fudge is super rich and creamy, and it's loaded with banana flavor. It's also ridiculously easy to make!

Ingredients

Servings
  • 24 oz white bark or stevia sweetened chocolate chips
  • 1 can (14 oz) sweetened condensed milk or low carb sugar free sweetened condensed milk
  • 1 box (3.4 oz) banana pudding or sugar free pudding or 1 - 1 ½ teaspoons banana extract.
  • 10 vanilla wafers, crushed or sugar free vanilla wafers

Instructions

  1. Prepare an 8x8-inch pan by lining it with aluminum foil or parchment paper.
  2. Heat condensed milk on stove until hot but not boiling and add pudding powder. Stir until dissolved. Add the chocolate in pieces and stir until blended. Mixture will be thick. OR melt chocolate in 25 second bursts in microwave stirring in between each, until melted and then add to hot condensed milk and pudding powder and stir until blended. Mixture will be thick.
  3. Pour mixture into your prepared pan.
  4. Sprinkle crushed vanilla wafers over top. Gently push them down into the fudge.
  5. Refrigerate fudge for 2 hours or until it is hardened.
  6. Cut into pieces and serve.

Notes

  • Fudge will taste great but will be grainy if instant pudding mix does not dissolve in condensed milk.
  • If microwaving the chocolate to melt it remember it will cool quickly. Once melted add to pudding mixture and stir as quickly as possible until blended.
  • Use a double boiler or heavy bottomed saucepan if possible on stove over medium low heat for best results.
  • Stir until mixture is smooth and STIR CONSTANTLY. This fudge can burn quickly and is thick.

  • Be sure you mix the fudge very well. You can't overmix it, but you can undermix it.
  • This fudge is good after a couple of hours in the fridge, but it's great after chilling overnight!
