Ingredients

Servings
  • canola oil
  • onion small, peeled and chopped
  • 2 cloves garlic peeled and minced
  • ½ pound ground pork
  • 1 tablespoon soy sauce
  • salt to taste
  • black pepper to taste
  • 4 saba banana ripe but firm
  • ½ cup flour
  • ½ cup water

Instructions

  1. In a pan over medium heat, heat about 1 tablespoon of oil. Add onions and garlic and cook until softened.
  2. Add ground pork and cook, breaking up to small pieces with the back of a spoon, for, about 8 to 10 minutes or until lightly browned.
  3. Add soy sauce and continue to cook, stirring regularly, until meat is cooked through. Season with salt and pepper to taste.
  4. Remove meat from pan and in a colander, drain any excess liquid. Allow to cool to touch.
  5. Peel bananas. With a knife, make an incision on one side of the bananas.
  6. Using a spoon, gently stuff the banana with the cooked meat.
  7. In a small bowl, combine flour and water. Whisk together until smooth and well blended. Spoon mixture over stuffed bananas to cover meat filling.
  8. In a pan over medium heat, heat about 2 inches deep of oil.
  9. Gently place bananas stuffed side up into the hot oil. Cook for about 3 to 5 minutes or until golden brown. Occasionally spoon oil on top of the bananas to cook and brown.
  10. Remove from heat and drain on paper towels. Serve warm.

Notes

  • For best results, use ripe bananas for a sweet flavor but very firm so they'll hold shape during cooking.
  • Do not overstuff the bananas lest they split open!
  • Make sure to use enough oil so the top of the bananas will cook and brown without having to flip.
