Banana Nut Bread Recipe

This Banana Nut Bread combines ripe mashed bananas with flour, baking soda, cinnamon, and chopped walnuts for a tender, moderately sweet loaf. The addition of turbinado sugar and walnuts on top adds a lightly crunchy texture. It’s a classic moist quick bread that provides a pleasant balance of banana flavor and nutty notes.

Description

The bread batter mixes mashed ripe bananas with sugar, softened butter, eggs, and vanilla extract. Dry ingredients including flour, baking soda, salt, and cinnamon are whisked separately and folded in along with chopped walnuts for texture. The batter is poured into a greased loaf pan and topped with additional walnuts and turbinado sugar to create a lightly crunchy crust.

Baked at 350°F for about an hour, the bread becomes golden brown with a moist crumb. A glaze made from powdered sugar and sweetened condensed milk can be added on top once cooled, enhancing sweetness and adding moisture.

This banana nut bread slices nicely for breakfast or snacks and is best stored properly to maintain freshness. Cooling fully before glazing helps prevent melting and preserves texture.

Ingredients

Servings

For the banana nut bread

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • 4 medium banana mashed, ripe
  • 1 cup granulated sugar
  • 1/2 cup butter softened, unsalted
  • 2 large egg
  • 1 teaspoon vanilla extract
  • 1 cup walnut plus more for topping, coarsely chopped
  • 1 tablespoon turbinado sugar for topping

For the sweetened condensed milk glaze

  • 1/3 cups powdered sugar
  • 1/3 cup sweetened condensed milk

Instructions

For the banana nut bread

  1. Preheat oven to 350°F. Spray one large nonstick loaf pan with cooking spray or grease with butter and set aside. (I used this 9.25 x 5.25 -inch pan from Wilton.)
  2. In a medium mixing bowl, add the flour, baking soda, cinnamon and salt. Whisk together until combined.
  3. In a large mixing bowl, add the mashed bananas, sugar, butter, eggs, and vanilla extract. Whisk together until combined.
  4. Add the flour mixture into the banana mixture and stir with a mixing spoon until combined. Add the chopped walnuts and fold them into the batter.
  5. Pour the batter into the prepared loaf pan. For an added crunch, top with more chopped walnuts and turbinado sugar.
  6. Bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Remove from oven and let the banana bread cool for 10 minutes. Then remove the banana bread from the loaf pan and let cool on a plate or wire rack until completely cooled. Top with sweetened condensed milk glaze if desired.

For the sweetened condensed milk glaze

  1. In a small mixing bowl, add confectioners' sugar and sweetened condensed milk. Whisk together until there are no more lumps and it's completely smooth. Pour on banana nut bread and enjoy!
