Banana Oat Cashew Quick bread Bar

Naturally sweet, these bars are great to enjoy anytime of the day. Vegan recipe full of flavor

Ingredients

Servings
  • 1/4 cup cashew ground, raw
  • 1/3 cup oats ground
  • 1/3 cup whole wheat pastry flour
  • 1/4 cup all-purpose flour or spelt or wheat pastry flour
  • 2-3 Tablespoons quinoa cooked, or any cooked small grain
  • 1 banana very ripe
  • 3 Tablespoons raw sugar or equivalent sweetener
  • salt a pinch
  • 1/4 teaspoon vinegar
  • 1/4 cup water or almond milk
  • ginger nutmeg, cloves and cinnamon powder, a generous pinch
  • 1 teaspoon baking powder

Instructions

  1. In a bowl, add chopped banana and mash it well.
  2. In another bowl mix/whisk the flours and baking powder well.
  3. Add the water/almond milk, vinegar, sugar, salt, spices to the banana mash and mix well.
  4. Add the flours and mix till just about combined.
  5. Drop batter on parchment lined or greased 8 inch cake pan.
  6. Even it out and Bake at preheated 360 degrees F for 30-35 minutes or until toothpick from the center comes out clean.
  7. Cool on rack before slicing.
