  • 2 Tablespoons nut butter or seed butter of choice
  • 1 whole wheat tortilla or regular tortilla
  • honey chia seeds, shredded coconut, or mini chocolate chips, optional toppings

Instructions

  1. Peel the banana and set it aside.
  2. Lay the tortilla flat on a clean surface. Spread the nut butter evenly over the tortilla, covering the entire surface
  3. Place the banana on one edge of the tortilla.
  4. Roll the tortilla tightly around the banana, ensuring the nut butter helps to seal the tortilla as you roll.
  5. Use a sharp knife to cut the rolled tortilla and banana into 1-inch thick slices, resembling sushi rolls.
  6. Arrange the banana sushi pieces on a plate or pack for lunch.
  7. If you have leftovers, store them in an airtight container in the refrigerator for up to 1 day.
